ROAST TOMATO & PEPPER PASTA ๐Ÿ…



1. Preheat the oven to 180C.
2. Add the tomatoes, pepper, garlic, balsamic vinegar, oil, half the basil, sugar, salt & pepper.
3. Toss well & roast for 30 mins, mixing half way through cooking. Once the veg is soft & slightly charred, itโ€™s done.
4. Meanwhile, cook the pasta in salty water until al dente.
5. Plate the pasta on a large serving dish, then mix in half the tomatoes & peppers.
6. Top the remaining tomato mixture with sauce on top.
7. Next, add the pea shoots, remaining basil & break the burrata over the surface.
8. Season with salt & pepper & an extra glug of olive oil if you fancy it, then serve โœจ๐Ÿ…โœจ๐Ÿ…โœจ๐Ÿ…
